Recipe: Vanilla Fudge Shortbread Bars

For a quick and elegant dessert, these Vanilla Fudge Shortbread Bars combine buttery, crumbly shortbread with a layer of our rich Vanilla Fudge, making them the perfect treat for afternoon tea or special occasions.

Ingredients:

For the shortbread base:

200g plain flour
50g caster sugar
125g unsalted butter, cubed

For the fudge layer:

150g our Vanilla Fudge, chopped into small pieces
2 tbsp double cream
1 tsp vanilla extract

Instructions:

Preheat your oven to 160°C (fan) / 180°C / 350°F / Gas mark 4. Line a 20cm (8-inch) square baking tin with parchment paper.
Make the shortbread base: In a bowl, rub the butter into the flour and sugar until the mixture resembles breadcrumbs. Press into the prepared tin and bake for 20 minutes or until lightly golden. Let it cool.
Prepare the fudge topping: In a small saucepan, gently heat the chopped Vanilla Fudge with double cream and vanilla extract, stirring until smooth.
Pour the melted fudge mixture over the cooled shortbread base and smooth out with a spatula.
Chill for at least 1 hour, or until fully set.
